Award-winning chef Pedro Miguel Schiaffino presents a culinary journey showcasing Ecuador’s dazzling array of local produce. In the spirit of Galapagoan conservation, the finest ingredients are sourced with a focus on ethical sustainability and supporting local farmers, fishermen, and providores.
With Aqua Mare’s cuisine, chef Schiaffino showcases and combines Japanese technique and Peruvian seasoning, serving signature dishes such as the potato llapingachos, tuna crudo, barbecued plantains, and shrimp ceviche.
Aqua Mare’s cocktail list also draws local influence with the Aqua Bloody Mare, utilizing the high Andean mashua and tree tomato in place of the traditional horseradish and tomato. The curated wine list is tailored to the menu with a focus on South American vineyards.
A born and bred Peruvian, chef Schiaffino is known for being one of the first culinarians in his country to put local cuisine on the international map. Renowned for his commitment to excellence, he has earned global recognition from The Diners Club World’s 50 Best Restaurants Academy for his innovative Amazonia-influenced cuisine at MALABAR and ámaz in Lima.
